Handymen, why bother with full liability insurance? It's a scam for solos

I've been doing handyman work for 8 years now, mostly odd jobs like deck repairs, drywall patches, and installing those damn IKEA cabinets that never fit right. Out here in Arizona the heat makes everything expand and contract like crazy, so I'm always fixing loose trim or re-caulking around windows. But seriously, my insurance agent keeps pushing this $2k a year general liability policy, saying I need it for every little job where I might scratch a homeowner's fancy quartz countertop. TBH, in all my time, I've never had a claim, and I just use my truck's coverage for tools and drive carefully. Saw a thread on r/handyman where guys were saying it's overkill unless you're swinging a chainsaw or something, and someone in Handyman Nation group agreed, calling it a racket to pad premiums. Why not just go barebones and pocket the cash? Fight me if you think I'm wrong.
