we just finished retrofitting this dive bar's back area and i went with separate indirect drains dumping into a floor sink, full air gap no question. health inspector gave it a nod but im second guessing if its overkill for a spot that size. seen setups like this hold up in busier joints though. anyone dealt with backups in these or nah? feels solid but curious on long term.

overkill? nah, its what the plumbing code mandates for prep areas. indirect waste lines with air gap to the receiver is non negotiable.

those floor sinks aint cheap, but beats a failed inspection. strainer always clogs anyway.

true, but in bars its mostly booze not grease so less hassle. still, air gap saves your ass on backflow tests.

looks fine to me, seen it in every walk in cooler setup too. just ensure the gap is at least twice the pipe diameter.

totally acceptable, ive installed hundreds. one thing, watch for the indirect piping sloping right or youll get standing water issues down the line. air gap is key for that no backflow zone, especially if the main drain backs up during rush hour. bars get slammed, so yeah, its a must.
